It is similar to chicken in appearance and color.

�I like to rub a pistou in the cavity and under the skin. A pistou is a classic Italian condiment consisting of pureed garlic, lemon zest, basil, salt and pepper.. Roast on a rack at 450 until the skin is brown and crispy. Then turn the oven down to 350 and finish until the juices from the thigh are flow clear when poked.� Chef LeBlanc
